STLCC Culinary Instructors, Student Capture ACF Regional Honors

St. Louis Community College and the St. Louis Chefs de Cuisine did well at the American Culinary Federation’s Central Regional Awards Gala this week, with two Forest Park teachers and a student earning honors.
Stephan Schubert, an adjunct instructor in baking and pastry arts, was named 2014 Central Region Pastry Chef of the Year, and will now advance to the national competition, set during the national convention July 25-29 in Kansas City. The four regional winners will compete for $5,000 and the title of ACF Pastry Chef of the Year.
Schubert, a pastry chef and chocolatier, is the executive pastry chef at the River City Casino, where he oversees pastry operations for the casino, event center and hotel. Schubert, 43, a native of Germany, has more than 27 years’ experience, including such five-star venues as the Grand Hotel on Mackinac Island, Caesars Palace, and Ritz Carlton Dearborn and Naples, as well as the world-class Cunard Cruise Line. He has been an adjunct faculty member at STLCC since 2007.

STLCC student David Stuckel, who is dual majoring in culinary arts and baking and pastry arts, received a gold medal as part of the third place-winning St. Louis Chefs de Cuisine team that competed in the Baron H. Galand Culinary Knowledge Bowl. In addition to the Knowledge Bowl, he was a finalist for the Central Region Student Chef of the Year. His three competitors hailed from Indiana, Minnesota and Nebraska.
Stuckel, of St. Louis, is a baker and prep cook at The Gatesworth. Last year, he was a finalist for Junior Chef of the Year. He plans to open his own restaurant someday, and his love of cooking began when he helped his parents feed crowds at parish picnics.
Jilly's Cupcake Bar & Cafe received one of the 12 Achievement of Excellence Awards, and was the only St. Louis honoree. Casey Shiller, coordinator the Baking and Pastry Arts program, is the executive pastry chef at Jilly’s. In 2012, Shiller was named both American Culinary Federation’s National and Central Region Chef Educator of the Year. He has won “Cupcake Wars” on the Food Network twice.
The Chefs de Cuisine Association of St. Louis was named the ACF Central Region Chapter of the Year, and also won the World of Thanks Award. ACF’s central region encompasses 15 states.
