Greek Cooking

Escape to the Greek isles in this culinary adventure! Prepare and enjoy a traditional Greek salad with homemade dressing; spanakopita, a spinach pie filled with feta cheese, onions and scallions, wrapped in phyllo dough; dolmades, grape leaves stuffed with ground beef and rice; souvlaki, a Greek street food of skewered chicken seasoned with spices served with homemade tzatziki sauce; and, for dessert, traditional baklava. Indian Street Foods

Do you love Indian cuisine? Want to add a healthy, simple, and savory snack to your culinary repertoire? Come learn how to make chaat, the most popular Indian street food. From a Hindi word meaning “to lick” or “to devour with relish,” this finger-licking snack blends sweet and savory flavors to create a nuanced dish that will satiate all your cravings. Served hot or cold, chaat is made with vegetables and garbanzo beans, topped with spicy and sweet date and tamarind chutney and mint chutney, then garnished with an assortment of spices and toppings. Pav bhaji, another favorite fast food that originated in Mumbai, combines a spicy mixture of vegetables, usually cooked on a tava or cast iron skillet and served with soft bread rolls. Moroccan Grill

Looking to add exciting new flavor to your summer grill? Explore herb- and spice-rich Moroccan flavors and classic dishes of lamb kabobs, kefta burgers and Moroccan grilled chicken. Also, enjoy preparing traditional warm and cold salads to accompany the feast complete with fresh-baked Moroccan bread and mint tea. While the dishes aren’t spicy hot, Moroccan harrisa can certainly be added on the side for those who like to turn up the heat. Modern Day Sauce Masters

Become a modern-day sauce master by learning the basics of sauce-making from scratch using modern ingredients and classic techniques. Learn how to make foundation sauces — pizza sauce, beefy spaghetti sauce, garlic butter sauce, pan sauces for chicken and beef, white cream sauce, cheese sauce, and emulsion dressing — and how to adjust the flavors and seasonings to best suit your tastes and meals. Save time by utilizing pre-made broths and stock bases, building your skills to thicken sauces with roux, corn starch slurry and a dressing-style emulsion. Includes lecture on sauce-making principles, demonstration of foundation sauces, hands-on cooking, and a gourmet pasta dinner complete with salad and garlic bread. Park on Hartford or Hampton. Learn the basics of buttercream, ganache and fondant to get you started on the right foot, and gain hands-on experience assembling flawless tiers. Practice leveling cake layers, filling and icing a cake with sharp edges. Familiarize yourself with the most commonly used piping tips for writing with icing and piping decorative borders and flowers. Through hands-on, interactive projects, learn photography fundamentals, composition, styling and editing.
